Pikayo This restaurant is one of the leading practitioners of a new wave in Puerto Rican cooking that honors culinary heritage but updates and re-creates dishes with a contemporary lightness and sophistications. Its suavely smooth green plantain soup, for example, is not so much fare for a Sunday night supper as it is for a dinner party. To experience the contrast between the green and ripe states of plantain, order Pikayo's elegant plantain with crab, an inverted timbale comprised of delicate morsels of land crab in a sauce flavored with a hint of honey and enveloped in thin slices of subtly sweet ripe plantain. Restaurateur and master chef Wilo Benet closed the doors of his original Pikayo and re-created it here for the artsy crowd flocking to the new museum. Twenty-two tables in cream and soft blue are awash in lighting that changes softly and subtly. On large screens, guests watch live "films" (thankfully, silent) of chef Benet and his staff at work in the kitchen (occasionally, museum exhibits are screened instead). Divine dishes make choosing difficult: broiled lobster with a sour sop beurre blanc and julienned chorizo; conch spring rolls with orange sofrito sauce; steamed cipollini onions and a foi gras terrine with truffle honey; cabbage stuffed with diced rabbit fricassee and raisins. The wine list has some 250 labels and focuses on California and Spanish vintages.
